Mornings are crazy around here. Often I find myself eating for the first time after noon and I decided it was finally time to get started on the meal prep I’ve been telling myself I would do for years. Starbucks egg bites are a go-to and I’m sure this may not be news to some but I found the secret ingredient – cottage cheese!

Anyway, if grab and go breakfasts are your thing try these out. So simple, they freeze nicely and the prep to make them takes no time. You can add your favorite toppings for endless options.

Ingredients:

  • 8 Eggs
  • 1/2 cup full-fat cottage cheese
  • 1 cup Gruyere
  • Salt and pepper (to taste)
  • Hot sauce (to taste)
  • 12 oz bacon cooked

Directions:

Combine all ingredients in a blender. Place a muffin pan on top of a baking pan filled halfway with water. Pour in egg mixture and sprinkle bacon pieces over each cup. Bake at 300 for 25-30 minutes until eggs are set. Refrigerate in an airtight container for up to one week or freeze for up to two months.
